Latex is a milky or cloudy liquid that is produced on cutting the context of the pileus or stipe or the lamellae. The simplest way to demonstrate the presence of latex is to draw a blade (or fingernail) across the lamellae. Latex droplets will soon appear where the lamellae have been cut. Latex is best observed on fresh fruit-bodies in good condition because once the fruit-body has started to dry out, latex will not be produced.
